Meat stock is famous in African homes as most mums like to preserve the liquid used in cooking meats, fish or stock fish for later.

Most times this liquid contains spicy ingredients like; maggi, salt, curry or garlic which will give the meat a very delicious taste and can be used for other meals if the need arises.
When cooking meats like chicken or beef parts- like boney beef parts (locally called biscuit bone), meats with lots of muscle like Cow shin, beef with fat deposits like hump, offal (Shaki, Abodi), cow leg, etc- you can add other ingredients like; bay leaves, thyme, onions, nutmeg, and other ingredients to suit ones taste.

Meat stock is known to give meals that unique taste which is why most Nigerians cannot do without it, and thats why the stock is sieved and stored.
