I was forced to create this recipe when realized that my son loved to gobble up his sausages and leave the pancakes (crêpes) uneaten! I decided to incorporate the sausages into crepes such that he would have no choice but to eat the whole meal. It turned out delicious. Try it!
INGREDIENTS
1 cup all-purpose flour
1 tablespoon sugar
1/4 teaspoon salt
1/4 teaspoon nutmeg powder
1 1/2 cups whole milk
4 eggs
3 tablespoons unsalted butter (optional)
Half a pack chicken frankfurter sausage (chopped into little cubes)
A little oil to coat your pan.
METHOD
Add all ingredients except your sausages and coating oil into your blender and blitz for 30 seconds or until you see bubbles in the batter.
Pour in chopped sausages and mix thoroughly with wooden spoon.
Coat your pan with a little oil and pour in the batter. Spread your batter by turning the pan to make the mixture move in the pan. The wider you spread, the thinner your crepe.
Turn over once the edges start to brown and cook till done. Enjoy!
Tips: Chop your sausages into really small pieces so they don’t make your crepes fall apart.
Using the blender is my own way of ensuring ii get lump free batter every time. For those who still prefer to mix by hand, Godspeed!
